Steps
- Wash the lettuce and tear it into chunky pieces, then place it in a bowl of cold water to soften.
- Clean the spring onions by removing the outer leaves. Slice the spring onions (remove the top) and add them to the container with the other ingredients.
- Wash the tomatoes. Cut each tomato into four sections, remove the seeds, and slice or chunk the tomatoes as desired. Add them to the container.
- Wash the peppers (yellow, red, and green). Cut each pepper in half lengthwise. Remove the fat/pith from the inside of the pepper. Slice all the prepared peppers and add them to the container.
- Cut the celery into strips. Wash it and add the strips to the container.
- Wash one piece of cucumber. Cut it in half, remove the seeds (optional), and cut it into strips. Add the strips to the container.
- Wash the radishes. Cut off the top and bottom ends. Slice or chop them as desired and add them to the container.
- Wash the mint leaves and roughly chop them. Set aside on a board.
- Drain the lettuce thoroughly from the cold water bath.
- Prepare the dressing: In a bowl, combine olive oil, salt, pepper, finely chopped garlic, and lemon juice. Whisk until combined.
