Cabbage and Egg Bake

Ingredients
- 2 tbsp Olive oil
- 1 medium Onion
- 1 (grated) Carrot
- 2 lb / 900g White cabbage
- to taste Salt
- to taste Black pepper
- 1/2 tsp Oregano
- 1/2 tsp Sweet paprika
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/2 tsp Dry parsley
- 5-6 Eggs
- 1 tbsp (optional) All purpose flour
- 1 tbsp Olive oil
- optional Fresh parsley
- optional Manchego cheese

Steps
- Add onions to the pan and fry for about 5 minutes over medium heat until translucent.
- Grate carrots and add them to the pan, frying for another 2 minutes.
- Add cabbage to the pan and fry for another 10-12 minutes over medium heat, stirring occasionally.
- Season with salt, black pepper, oregano, sweet paprika, garlic powder, onion powder, and dry parsley.
- Add eggs to the cooked vegetables and mix well.
- If using, add all purpose flour (optional).
- Pour into a baking dish or pan, drizzle with 1 tbsp olive oil, and fry just for 2 minutes until the bottom is set.
- Place in an oven preheated to 400F/200C for 4 minutes.
- If desired, add Manchego cheese on top and finish under the broiler for 1 minute until melted.
- Sprinkle with fresh parsley (optional).
