Cajun Shrimp Sausage Pasta

- as needed Fetuccine pasta
- to taste Water and salt for boiling pasta
- 1 link/amount as desired Andy sausage (chicken or pork)
- as needed Shrimp medallions
- as needed Extra virgin olive oil (garlic infused)
- as needed Onions
- as needed Garlic cloves
- 3/4 cup Broth
- as needed Heavy whipping cream
- as needed Tomatoes (diced)
- a couple of tablespoons Sugar
- as needed Fresh thyme
- as needed Parsley
- to taste Salt (kosher)
- to taste Black pepper
- a little bit Butter
- as needed Parmesan cheese

Steps
- Bring a pot of water to a boil and add salt. Cook the fettuccine according to package instructions until al dente.
- Reserve about 1 cup of pasta water before draining the cooked fettuccine, then shock it in cold water to stop the cooking process.
- While the pasta cooks, prepare the sausage by cutting off the ends and slicing it into medallions. Dice the onions as desired.
- Heat a pan over medium-high flame and add extra virgin olive oil (garlic infused). Add shrimp and cook for about 2 minutes on each side at a medium flame until cooked through.
- Stir in black pepper and a little bit of butter to the shrimp. Add the sausage medallions to the pan and sauté.
- Add the diced onions to the pan, starting with them first, then add the minced garlic.
- Pour about 3/4 cup of broth into the pan and bring it back to a boil.
- Once boiling, pour in heavy whipping cream. Once again, raise the heat slightly to medium-high flame.
- Add tomatoes to the mixture. To balance the acidity, add a couple of tablespoons of sugar.
- Add the remaining ingredients (including parsley) and stir everything together.
- Taste the sauce and season with salt as needed.
- Grate in parmesan cheese into the pan, stirring constantly until it thickens slightly.
- Add the cooked fettuccine to the pan. Add a little bit of reserved pasta water from the colander while continuing to stir over medium heat.
- Continue cooking and stirring for about 2 minutes, adding more parmesan if desired, until the sauce coats the noodles nicely.
- Turn off the heat.
