Slow Cooker Macaroni and Cheese

  • 1 pound Pasta (elbow shape)
  • to taste Salt
  • as needed for boiling pasta Water
  • 8 oz block Sharp Cheddar Cheese
  • 1 pound Extra Sharp White Cheddar Cheese
  • 3 oz Cream Cheese
  • 1 whole egg Egg
  • 1 yolk Egg Yolk
  • 1 1/2 cups Whole Milk (full fat)
  • as needed for cooking process Evaporated Milk
  • cubes, amount not specified Butter
  • to taste (for seasoning) Salt
  • to taste Pepper
  • optional Cajun Seasoning

Steps

  1. Cook the pasta in salted water until it is al dente, which should take about 6 to 7 minutes.
  2. Grate all of the cheese (Sharp Cheddar and Extra Sharp White Cheddar) yourself from blocks for maximum flavor and melt potential.
  3. In a slow cooker, spray the sides with cooking spray to prevent sticking.
  4. Add the cooked macaroni to the slow cooker.
  5. Pour in 1 1/2 cups of whole milk (full fat).
  6. Add the butter cubes and cream cheese to the mixture.
  7. Whisk together one egg and one egg yolk, then add them to the slow cooker.
  8. Stir in most of the grated cheese, leaving some for the topping.
  9. Season with salt, pepper, or Cajun seasoning if desired.
  10. Cook on low for about 2 hours.
  11. After 1 hour, stir the mixture again.
  12. For the final finishing touch, sprinkle the remaining cheese over the top and crank the slow cooker to high for 10 more minutes, or until the cheese is melted and gooey.
