Carne con Papas

Ingredients

  • 1 and a half pounds Sirloin meat (cubed)
  • 2 Russet potatoes
  • half Onion
  • a third of Green bell pepper
  • 1 Roma tomato
  • 1/2 (big bay leaf) Bay leaf
  • 2 Garlic cloves
  • about 2 tablespoons Tomato sauce
  • enough to cover the dish Chicken broth
  • 2 teaspoons OG seasoning (salt, pepper, garlic)
  • 1 tablespoon Flour
  • a little bit Cold water

Steps

  1. Heat oil in a pan over medium-high heat.
  2. Add the cubed sirloin meat to the hot pan and sear until browned, allowing excess moisture to evaporate for flavor development.
  3. Lower the heat slightly. Add the chopped onion, green bell pepper, and roma tomato to the pan.
  4. Sauté the vegetables briefly.
  5. Stir in the tomato sauce (about 2 tablespoons).
  6. Add the chicken broth until it covers all the ingredients.
  7. Sprinkle in the OG seasoning (salt, pepper, garlic) and add half of a bay leaf.
  8. Bring to a simmer by turning the heat down from high. Cover the pot with a lid.
  9. Simmer for about 20 minutes or until the potatoes are soft.
  10. Once the potatoes are done, stir in the flour mixed with cold water (slurry) to thicken the broth and make it soupier.
