  • 28 ounce can crushed tomatoes
  • half a cup heavy cream
  • 1 teaspoon dried basil
  • half a teaspoon dried oregano

  • a dash salt
  • half a cup vegetable broth
  • 2 cups fresh chopped spinach
  • 9 ounces cheese tortellini (fresh or frozen)
  • half a cup Parmesan cheese

Steps

  1. Add about 1 tablespoon of minced garlic to the pan and stir until fragrant.
  2. Stir in a 28 ounce can of crushed tomatoes along with half a cup of heavy cream, then bring the mixture up to a simmer.
  3. Once simmering, add seasonings: about 1 teaspoon of dried basil, half a teaspoon of dried oregano, half a teaspoon of pepper, and a dash of salt.
  4. Add in half a cup of vegetable broth along with two cups of fresh chopped spinach and nine ounces of cheese tortellini.
  5. Stir in half a cup of Parmesan cheese.
  6. Let the mixture simmer covered for about 10 minutes, stirring often to prevent sticking.
  7. Serve once the cheese tortellini is tender.
