Creamy Shell Beef Pasta

Ingredients

  • 1 lb small pasta shells (or elbow macaroni)
  • 1 1/2 lbs lean ground beef
  • one can Rotel (diced tomatoes and green chilies)
  • 8 oz mild cheddar cheese
  • 1 cup to 1 1/2 cups heavy cream
  • 4 1/2 cups water
  • to taste taco seasoning mix
  • 2 teaspoons chicken bullion powder (optional)

Steps

  1. Start by cooking the ground beef, seasoning it with taco seasoning mix and 2 teaspoons of chicken bouillon powder.
  2. Combine the cooked ground beef with the entire bag of pasta shells in one pot.
  3. Add the drained can of Rotel (diced tomatoes and green chilies) to the mixture.
  4. Pour in 4 1/2 cups of water, mix well, and bring the contents to a rapid simmer or boil.
  5. Once boiling, turn the heat down and let it cook for about 10 minutes.
  6. Carefully add the shredded mild cheddar cheese to the simmering mixture.
  7. Stir in 1 cup to 1 1/2 cups of heavy cream until melted and combined with the cooked beef and shells.
