Steps

  1. Lightly spray a baking sheet with olive oil spray and set aside.
  2. In a small bowl, combine the baking powder, garlic powder, paprika, salt, pepper, and any additional favorite seasonings. Mix well until all ingredients are combined.
  3. Remove chicken from its paper towel (if it was placed on one) to ensure the bottom is dry. Season each piece of chicken thoroughly with the dry rub mixture.
  4. Apply seasoning to the front of the chicken by rubbing it in, but do not rub too much as this is a dry rub. For the underside, apply some seasoning to the backs of each piece to get the seasoning in well without turning the chicken over completely.
  5. Preheat your oven to 425°F.
  6. Position the seasoned chicken pieces on the baking sheet, ensuring there is enough room between them for air circulation so they do not touch.
  7. Bake the chicken in the preheated oven for approximately 30 to 40 minutes, or until an internal temperature of 165°F is reached and the chicken is no longer pink inside.
  8. Drizzle pan drippings over each piece of cooked chicken before serving.
