Crockpot Chicken Fajita

Ingredients

  • 1 jar Chunky salsa
  • 2 Large chicken breasts
  • 1 whole Green bell pepper
  • 1 whole Yellow bell pepper
  • 1 whole Red bell pepper
  • about half White onion
  • 1 entire package Fajita seasoning mix

Steps

  1. Place the two large chicken breasts on top of one jar of chunky salsa.
  2. Add one whole green bell pepper, sliced into fajita-like slices, to the crock pot.
  3. Add one yellow bell pepper and one red bell pepper (or any other desired bell peppers) to the crock pot.
  4. Add about half of a white onion, cut into slices, to the crock pot.
  5. Sprinkle the entire package of fajita seasoning mix over the ingredients in the crock pot.
  6. Use tongs to spread the seasoning around and ensure it covers the veggies and chicken pieces thoroughly.
  7. Cover the crock pot with its lid and cook on high for 4 hours.
  8. After cooking, turn off the crock pot and shred the cooked chicken using a hand mixer or by hand.
  9. Serve the shredded chicken over cilantro lime rice, topped with the salsa and vegetables.
