Finnish Style Blueberry Pie

- 125 g Butter (melted)
- 1/2 cup Plain white sugar
- 1 Egg
- 1 1/2 cups All-purpose flour
- 1 pinch Salt
- 1 teaspoon Baking powder
- 3 tbsp Oats (rolled or quick)
- 150 g Sour cream (or natural yogurt/Greek style yogurt)
- 250 g (about two small punnets) Fresh blueberries
- 2 tbsp Sugar (for topping)
- 1 tablespoon Cornflour or cornstarch

Steps
- Melt 125 g of butter in a mixing jug.
- Add half a cup of plain white sugar to the melted butter and stir well.
- Crack one egg into the mixture and stir until combined.
- In a separate mixing bowl, combine 1 1/2 cups of all-purpose flour, 1 pinch of salt, 1 teaspoon of baking powder, and 3 tbsp of oats. Mix together.
- Add the wet ingredients (melted butter mixture) to the dry ingredients in the mixing bowl and mix until combined to form a slightly sticky dough.
- Carefully mix in 150 g of sour cream (or natural yogurt/Greek style yogurt) into the dough until it is fully incorporated, resulting in a wetter sticky dough.
- Grease the interior surface and sides of a quiche dish or pie plate with melted butter to prevent sticking.
- Transfer the sticky dough into the prepared baking dish using a spatula. Press the mixture evenly across the entire bottom and up the sides, forming a pastry bowl shape.
- In a separate bowl, combine 250 g of fresh blueberries (or frozen/thawed), 2 tbsp of sugar, and 1 tablespoon of cornflour or cornstarch.
- Toss the blueberry mixture together until all berries are coated. Spread the blueberry mixture evenly over the dough base in the baking dish.
- Preheat oven to 225° C (440° F).
- Bake for approximately 25 minutes, or until the pie has risen slightly and is golden brown.
