Steps
- Trim the cartilage and score the joints of the chicken feet.
- Put the chicken feet and frozen chicken bones in a large pot and cover with boiling hot water.
- Add at least 4 tablespoons of salt.
- Simmer on the absolute minimum heat for exactly 5 hours, never letting it reach a heavy boil.
- Strain the broth through a fine sieve to leave a clean concentrate.
- Finely chop zucchini, mushrooms, and carrots; press the garlic into a paste; finely chop the dill; mix in a bowl.
- Spread the vegetable mixture in a thin layer on parchment paper and dry in the oven at 122 F for 1 to 2 hours with the door left slightly open.
- Combine boiled rice with the dried vegetables, a generous pinch of salt and black pepper, and pour in the concentrated bone broth so it soaks into the rice.
- Pack the mixture into small bags in equal portions, twisting them into pyramid shapes.
- Freeze for 2 hours until the collagen sets into a solid block.
- To serve, drop a pyramid into a bowl and add boiling water.
