German Cucumber Salad

  • 3-4 Standard cucumbers
  • 1 teaspoon Salt
  • 1 Medium onion (Vidalia recommended)
  • 1 cup Sour cream (full fat)
  • 3 tablespoons Vinegar
  • 2 tablespoons Sugar or sugar substitute
  • 3-4 tablespoons Fresh dill, chopped

Steps

  1. Peel the standard cucumbers. Use a slicer to cut them into thin strips (about eighth of an inch thick).
  2. Place the sliced cucumbers in a bowl and add 1 teaspoon of salt. Mix well, ensuring all slices are coated.
  3. Let the cucumbers sit for about 20 minutes to allow excess water to drain.
  4. Drain the cucumbers thoroughly.
  5. Cut the medium onion into thin strips.
  6. In a separate large bowl, combine the drained cucumbers and the sliced onions.
  7. Add the sour cream, vinegar, sugar (or substitute), and fresh dill to the mixture.
  8. Mix all ingredients together until well combined. Taste and adjust seasonings as needed.
