- 3 cups Jasmine rice
- 2 tablespoons Coconut oil
- 1 large, diced Onion
- 5 cloves, diced Garlic
- 1 large, diced Sweet pepper
- 3 stalks, chopped Scallions
- as needed Mixed vegetables
- 1 tablespoon Turmeric powder
- as needed Pimentos
- 1 teaspoon Sea salt
- as needed Fresh thyme
- 2 tablespoons Butter
- 0.5 tablespoon All-purpose seasoning
- 3 cups Coconut milk

Steps
- Heat 2 tablespoons of coconut oil in a pot over the stove.
- Sauté the onions for 2 minutes until they release their flavor.
- Add the garlic and pimento to the pot.
- Stir in the sweet pepper, fresh thyme, and scallions.
- Add half tablespoon of all-purpose seasoning and 1 tablespoon of turmeric powder.
- Season with 1 teaspoon of sea salt.
- Lower the stove heat and cover the pot. Blend the coconut milk (after cutting it up for easy blending) and add water to the blender.
- Turn the stove back on, pour in the blended coconut milk, and give it a stir.
- Cover the pot and let it come to a boil while you wash 3 cups of rice until the water runs clear.
- Add the washed rice to the pot. Stir in the butter.
- Cover the pot and allow the mixture to steam for 15 minutes before adding the mixed vegetables.
- After 15 minutes, fluff the rice using a fork (do not use a spoon).
- Stir in the mixed vegetables.
- Cover the pot again and allow it to steam for another 5 minutes until the vegetables are cooked into the rice.
