- 1/2 Green bell pepper
- 1/2 Yellow onion
- as needed Chicken legs
- some Extra virgin olive oil
- some Adobo allpurpose seasoning (or garlic and herb allpurpose seasoning)
- some Italian seasoning
- some Smoked paprika
- some Onion powder
- some Salt
- some Black pepper

Steps
- Slice the green bell pepper and yellow onion into thin strips.
- Clean the chicken legs, removing any small feathers or yellow skin at the bottom. Wash hands thoroughly.
- In a measuring cup, mix extra virgin olive oil with adobo allpurpose seasoning (or garlic and herb allpurpose seasoning), Italian seasoning, smoked paprika, onion powder, salt, and black pepper to create the chicken seasoning mixture.
- Pat the cleaned chicken legs dry with a paper towel.
- Add the chicken seasoning mixture and olive oil onto the chicken legs. Thoroughly mix it into the chicken, ensuring it gets under and on top of the skin.
- Butter the bottom of a 9x13 inch baking dish.
- Place the seasoned chicken legs in the baking dish.
- Add the sliced green bell pepper and onion around the chicken.
- Mix chicken broth with flour in the same measuring cup used for seasoning. Carefully pour this mixture into the bottom of the baking dish, avoiding pouring it over the chicken.
- Cover the baking dish with foil.
- Bake at 375 degrees Fahrenheit for 45 minutes.
- Carefully remove the foil after 45 minutes to allow steam to escape.
- Using a spoon, carefully baste all of the chicken legs with some of the juices from the bottom of the dish.
- Return the baking dish to the oven uncovered and bake for an additional 25 to 30 minutes until cooked through (until it is falling off the bone).
- Baste the chicken again before serving. You may also flip the chicken to ensure all legs are coated in juice.
