Ingredients
- 2 Medium-sized ripened tomatoes
- 1/3 cup Turkish white cheese
- A couple of Green peppers (sweet or hot)
- Some Olive oil
- Couple of Eggs
- 1 tbsp Butter
- To taste Salt
- To taste Red pepper flakes or sweet paprika

Steps
- Cut the green peppers, removing the stems and seeds. Slice them thinly.
- Heat a 23 cm (9 inch) pan over medium heat with olive oil and add the sliced green peppers to sauté until they soften.
- Add butter and cook for about three or four minutes after it browns.
- Grating the tomatoes: cut them in half without peeling, then grate them into the pan.
- Cook the tomatoes until they turn into a sauce (about three or four minutes).
- Season with salt and red pepper flakes/sweet paprika.
- Add the cheese. Stir until incorporated and cook for 25 to 30 seconds.
- Turn on the heat again to serve it hot, then add the eggs in the last minute.
- Stir the eggs slowly, not too much or breaking them completely; you want some whole parts of the egg visible.
- Cook for an additional 30-40 seconds, adjusting based on pan size and heat.
