Mexican Crockpot Chicken Rice

Ingredients

  • 2 packages Nor taco rice (two packages)
  • 4 cups Chicken broth
  • 29 oz Black beans (drained)
  • 1 jar Paste salsa
  • 3 large Chicken breasts
  • To taste/as needed Taco seasoning
  • 1 bag Mexican blend shredded cheese

Steps

  1. Place two packages of Nor taco rice into the crockpot.
  2. Pour in four cups of chicken broth and add it to the crockpot with the rice.
  3. Add 29 oz of drained black beans (or substitute kidney, garbanzo, or other preferred beans) to the crockpot.
  4. Stir in one jar of paste salsa into the mixture.
  5. In a separate bowl, chop three large chicken breasts into small pieces and toss them with taco seasoning until fully coated.
  6. Place the seasoned chicken pieces into the crockpot over the rice, broth, beans, and salsa.
  7. Cover the crockpot and cook on high for 2 to 2.5 hours.
  8. After cooking time has elapsed, sprinkle the entire bag of Mexican blend shredded cheese evenly over the top of the mixture.
  9. Replace the lid and allow the cheese to melt for approximately 2 to 3 minutes.
  10. Turn off the crockpot and serve.
