Mexican Inspired Ground Turkey Casserole

Ingredients

  • as needed Ground turkey (super lean)
  • to taste Salt and pepper
  • 1 can/package Uncle Ben's ready rice
  • 15 oz, drained Corn
  • 1, diced Green bell pepper
  • 1, diced Red onion
  • 1 can, drained Black beans (low sodium)
  • 1 can Rotel
  • 1 extra can Green chilies (diced)
  • as needed for topping and mixing Cheddar jack cheese

Steps

  1. Cook the ground turkey with a little salt and pepper.
  2. Add Uncle Ben's ready rice to the cooked ground turkey.
  3. Toss all ingredients together.
  4. Pour in the enchilada sauce (whole can).
  5. Cover the dish with foil and bake at 350°F for 15-20 minutes.
  6. After baking, give the casserole a good stir to mix everything thoroughly.
  7. Sprinkle the top of the casserole with cheddar jack cheese.
  8. Return the casserole to the oven (or place under the broiler) until the cheese is nice and melted and bubbly (approx. 5 minutes or less).
