Mexican Skillet Dinner

- as needed Chorizo or Pork Sausage
- as needed Corn
- 1 can Diced Tomatoes with juice
- as needed Water
- as needed Instant Rice
- as needed Pinto Beans (washed and drained)
- 3/4 cup or more Mexican Cheese (shredded)

Steps
- Heat a skillet over medium heat.
- Add the chorizo sausage to the heated pan, breaking it up and browning until cooked through. Remove the browned chorizo from the pot and drain any excess grease.
- To the same pot, add the corn, diced tomatoes with their juice, water, instant rice, cumin, chili powder, and paprika.
- Turn the heat back on high to bring the mixture to a boil, then reduce the heat slightly, cover, and let it cook for about 5 minutes until the rice is tender.
- Stir the cooked chorizo sausage back into the pot along with the pinto beans. Stir everything together and allow it to simmer until the beans and sausage are heated through.
- Sprinkle the shredded Mexican cheese over the top of the mixture, let it sit for a minute to melt, then serve.
