Mexican Skillet Dinner

Ingredients

  • as needed Chorizo or Pork Sausage
  • as needed Corn
  • 1 can Diced Tomatoes with juice
  • as needed Water
  • as needed Instant Rice
  • as needed Pinto Beans (washed and drained)
  • 3/4 cup or more Mexican Cheese (shredded)

Steps

  1. Heat a skillet over medium heat.
  2. Add the chorizo sausage to the heated pan, breaking it up and browning until cooked through. Remove the browned chorizo from the pot and drain any excess grease.
  3. To the same pot, add the corn, diced tomatoes with their juice, water, instant rice, cumin, chili powder, and paprika.
  4. Turn the heat back on high to bring the mixture to a boil, then reduce the heat slightly, cover, and let it cook for about 5 minutes until the rice is tender.
  5. Stir the cooked chorizo sausage back into the pot along with the pinto beans. Stir everything together and allow it to simmer until the beans and sausage are heated through.
  6. Sprinkle the shredded Mexican cheese over the top of the mixture, let it sit for a minute to melt, then serve.
