One Pot Mexican Chili Rice

Ingredients

  • 5-6 Garlic cloves
  • 1 Green bell pepper
  • 1 large White onion
  • 500-600 g Beef mince
  • 2-3 tablespoons (plus extra for browning) Olive oil
  • 1 tin, washed and drained Kidney beans
  • As needed Crushed tomatoes
  • 2 tbsp Tomato puree
  • A splash/as needed Water (for chili base)
  • 1 mug of boiling water (initial simmer) Boiling water (for rice)
  • As needed Lime juice
  • Large handful Fresh coriander
  • 1.5 mugs, washed and soaked for 45-60 minutes Basmati rice
  • To taste (plus extra for rice) Salt
  • A lot Black pepper
  • 1-2 tsp Garlic powder
  • 2 tbsp Coriander powder
  • 1 tsp Smoked paprika
  • 1 tsp Cumin powder
  • 1/2 tsp Cayenne pepper
  • 2 tsp Paprika (sweet)
  • A sprinkle Red chili flakes
  • A good sprinkle Dried parsley
  • A good sprinkle Dried oregano
