Steps
- Remove the ribs from packaging and pat them dry on both sides.
- Flip your rack over bone side up to make it easier to see.
- Take a knife and cut in between each bone to separate them, cleaning up any extra cartilage or bone fragments if necessary.
- Season the ribs evenly with the sweet barbecue rub on all four sides.
- Set up the grill for dual zone cooking (hot side and cool side) at 400-450°F.
- Start the ribs on the direct heat side of the grill, flipping them every 2 minutes or so to develop a crust and char on all four sides. This takes between 10 to 15 minutes.
- Move the ribs over to the indirect heat side of the grill and cover for about 15 minutes until they reach an internal temperature of around 170°F.
- While the ribs cook, prepare the barbecue sauce: In a small saucepan on the direct heat side of the grill, combine the sweet baby rays base, butter, honey, and all-purpose seasoning (salt, pepper, garlic).
- Cook the sauce for about 5 minutes until the butter melts and the sauce is ready.
- Brush the barbecue sauce onto all four sides of the ribs to coat them evenly.
- Once cooked through (internal temperature between 190-195°F), remove the ribs from the grill, cover with foil, and let them rest for about 5 to 10 minutes.
