Steps

  1. Cut the outside skirt steak into bite-sized pieces, trimming them lengthwise.
  2. Season the meat with OG and WOW! rubs.
  3. Heat a plancha or griddle over high heat and add cooking oil.
  4. Place the seasoned fajitas on the hot surface, spreading them out slightly to ensure an even sear.
  5. Cook the meat until it is nicely browned (medium well or medium rare), ensuring you do not overcook it.
  6. Add the onions to the plancha where it is hotter and cook for about 30 seconds to a minute until soft.
  7. Mix in the cooked onions with the fajitas.
  8. Add the bell peppers and tomato to the pan.
  9. Stir everything together and continue cooking until all vegetables are tender and well-browned, ensuring you do not overcook them.
  10. Turn down or turn off the heat completely once the fajitas and vegetables are cooked through.
  11. Warm tortillas by heating them on the plancha with a little of the oil.
