Restaurant Style Mexican Rice

Ingredients
- 2 lb Ground Beef
- 1 Onion
- 2 Rice-A-Roni Mexican style boxes
- as needed Seasoning packets (from Rice-A-Roni)
- 1/2 stick Butter
- 1 can Rotel (diced tomatoes and green chilies, undrained)
- 1 can Brown beans (undrained)
- a bag/can Fire roasted corn (frozen or canned)
- 1 can Black beans
- as needed Garlic powder
- as needed Onion powder
- the whole box Beef stock
- 1 can Cream of mushroom soup
- 1 1/2 cups Shredded cheese

Steps
- Melt the butter.
- Add two boxes of Rice-A-Roni to the melted butter and stir in.
- Season with salt and pepper.
- Add a can of Rotel (undrained) and one can of brown beans (undrained).
- Stir in fire roasted corn or canned corn, and add one can of black beans.
- Season the mixture further with garlic powder and onion powder.
- Pour in the whole box of beef stock.
- Add the cream of mushroom soup to the mixture.
- Once all ingredients are combined, let it simmer for about 25 minutes.
- After simmering, put 1 1/2 cups of shredded cheese on top and cover the pot.
- Let the residual heat melt the cheese until ready to serve.
