Restaurant Style Mexican Rice

Ingredients

  • 2 lb Ground Beef
  • 1 Onion
  • 2 Rice-A-Roni Mexican style boxes
  • as needed Seasoning packets (from Rice-A-Roni)
  • 1/2 stick Butter
  • 1 can Rotel (diced tomatoes and green chilies, undrained)
  • 1 can Brown beans (undrained)
  • a bag/can Fire roasted corn (frozen or canned)
  • 1 can Black beans
  • as needed Garlic powder
  • as needed Onion powder
  • the whole box Beef stock
  • 1 can Cream of mushroom soup
  • 1 1/2 cups Shredded cheese

Steps

  1. Melt the butter.
  2. Add two boxes of Rice-A-Roni to the melted butter and stir in.
  3. Season with salt and pepper.
  4. Add a can of Rotel (undrained) and one can of brown beans (undrained).
  5. Stir in fire roasted corn or canned corn, and add one can of black beans.
  6. Season the mixture further with garlic powder and onion powder.
  7. Pour in the whole box of beef stock.
  8. Add the cream of mushroom soup to the mixture.
  9. Once all ingredients are combined, let it simmer for about 25 minutes.
  10. After simmering, put 1 1/2 cups of shredded cheese on top and cover the pot.
  11. Let the residual heat melt the cheese until ready to serve.
