Sheet Pan Quesadilla

Ingredients

  • 8 Flour tortillas (burrito size)
  • 4 cups Cheese
  • 1 pound Ground beef taco meat (or ground chicken, turkey, steak, etc.)
  • amount needed Canned green chilies
  • amount needed Black beans
  • amount needed Pickled jalapenos
  • a little bit Cilantro
  • a little bit Olive oil
  • 1 Sheet pan (regular size cookie sheet)

Steps

  1. Layer eight burrito-size flour tortillas on the bottom of a regular-sized cookie sheet pan, starting by placing two on each side and then one in the middle to cover the gap.
  2. Lay down a bottom layer of cheese over the entire surface of the tortilla layers.
  3. Spread one pound of seasoned ground beef taco meat evenly over the cheese layer. (Alternatively, use chicken, turkey, steak, or vegetarian fillings.)
  4. Layer canned green chilies, black beans, and pickled jalapenos over the meat/filling mixture.
  5. Sprinkle a little bit of cilantro on top of the filling.
  6. Add another generous layer of cheese over all the ingredients.
  7. To fold the quesadilla, take one tortilla and place it in the middle to close the hole created by the initial layering. Then, fold the edges inward until they overlap, ensuring all the filling is enclosed.
  8. Brush the top surface of the folded quesadilla with a little olive oil.
  9. Preheat oven to 450 degrees F.
  10. Place another same-sized cookie sheet pan on top of the folded quesadillas and press down slightly. This helps weigh it down, keeps the shape, and ensures even browning.
  11. Bake for 20 to 25 minutes.
