Saucy Chicken with Vegetables

Ingredients
- as needed chicken thigh
- sliced potatoes
- chopped carrots
- about 1 teaspoon of salt added to them green beans
- as needed bell peppers
- chopped onions
- just enough slices fresh ginger
- eight cloves minced garlic
- 1 teaspoon ground pepper
- a pinch (for chicken) salt
- 1 tbsp tomato paste
- 5 tablespoons soy sauce
- 2 tablespoons oyster sauce
- just enough to cover the chicken water
- 2 and 1/2 tbsp fish sauce
- 1 tbsp (optional) brown sugar
- about 1 tablespoon cornstarch
- 2 tablespoons water

Steps
- Cut the chicken thigh into smaller pieces.
- In a hot pan with a little oil, fry your sliced potatoes until they're golden and slightly crispy on the outside.
- Once the potatoes start to brown, add in the chopped carrots and fry them along with the potatoes. Give them a few minutes to soften and blend with the flavor.
- Next, toss in the green beans. Add about a teaspoon of salt to bring out the taste of the vegetables. Stir and cook just until the beans turn a vibrant green.
- Add the bell peppers and toast lightly, just enough to bring out the aroma.
- Once everything is nicely cooked, remove all the vegetables from the pan and set them aside.
- In the same pan, add a bit of oil if needed and sauté some chopped onions until they're soft and fragrant.
- Add in just enough slices of fresh ginger. Let it cook to add a warm, slightly spicy aroma to the dish.
- Now add the eight cloves minced garlic. Let those aromatics cook together just until the garlic starts to turn golden.
- Bring in the sliced chicken. Sauté it well until the outside of the chicken begins to brown and all those flavors come together.
- Season with a teaspoon ground pepper and a pinch of salt. Keep stirring until the chicken develops nice golden edges.
- Add 1 tbsp of tomato paste.
- Pour in 5 tablespoons of soy sauce, followed by 2 tablespoons of oyster sauce. Let that cook for a minute so the sauce clings to the chicken.
- Now add just enough water to cover the chicken. Let it simmer gently until the chicken is fully cooked and tender.
- Once it's simmered nicely, return the toasted vegetables back to the pan. Stir gently to combine and let the flavors come together.
- For the final seasoning, add 2 and 1/2 tbsp of fish sauce.
- Next, add 1 tbsp of brown sugar (optional).
- Taste and adjust the salt if needed.
- Mix about a tablespoon of cornstarch with 2 tablespoons of water. Stir it until smooth.
- Slowly pour in a cornstarch slurry while stirring. Let it simmer for a few more minutes until the sauce becomes rich and glossy.
