- Prepare the dry rub by mixing salt, pepper, paprika, and sesame seeds until uniform.
- Prepare the sauce for the tuna by combining olive oil, vinegar (rice vinegar or red wine vinegar), soy sauce, sesame oil, lemon juice, and wasabi paste (or mustard).
- Pat the tuna steaks dry with a paper towel to ensure they are not moist.
- Dip each tuna steak into the prepared sauce, ensuring it is covered on all sides.
- Coat the sauced tuna steaks in the dry rub, making sure it is coated on all sides.
- Spray the seasoned tuna down with oil to prevent sticking.
- Preheat a grill until very hot (coals should be white-hot).
- Grill the first side of the tuna for approximately 1.5 minutes.
- Flip the steaks and cook the second side for about 2.5 minutes.
- After cooking on one side, flip the steaks again and give them an additional 45 seconds.
