Whole Roasted Branzino with Lemon Garlic Butter Sauce

Ingredients

  • 2 whole branzino
  • to drizzle olive oil
  • to taste salt
  • to taste pepper
  • 4 to 5 garlic cloves
  • 2 slices per fish plus 1 for juice lemon
  • a few sprigs fresh herbs (parsley, thyme, oregano, or rosemary)
  • 1/2 cup unsalted butter
  • 2 to 3 garlic cloves (for butter sauce)
  • 1/4 teaspoon kosher salt (for butter sauce)

Steps

  1. Preheat the oven to 425°F (220°C).
  2. Place the branzino on a parchment-lined baking tray and pat dry inside and out.
  3. Score the skin with three shallow cuts per side.
  4. Drizzle with olive oil and rub inside and out; season with salt and pepper.
  5. Stuff cavity with smashed garlic cloves, lemon slices, and fresh herbs.
  6. Place additional lemon slices around fish for garnish.
  7. Roast in the oven for 16 to 18 minutes until flesh is opaque and flakes easily.
  8. Optional: broil for last 1-2 minutes for crispy skin.
  9. Make lemon garlic butter: melt 1/2 cup butter, add 2-3 garlic cloves, stir 30 seconds, remove from heat, add 1/4 tsp kosher salt and juice of 1 lemon.
  10. Garnish fish with roasted lemon slices and fresh herbs; drizzle with lemon garlic butter sauce.
