Whole Roasted Branzino with Lemon Garlic Butter Sauce

Ingredients
- 2 whole branzino
- to drizzle olive oil
- to taste salt
- to taste pepper
- 4 to 5 garlic cloves
- 2 slices per fish plus 1 for juice lemon
- a few sprigs fresh herbs (parsley, thyme, oregano, or rosemary)
- 1/2 cup unsalted butter
- 2 to 3 garlic cloves (for butter sauce)
- 1/4 teaspoon kosher salt (for butter sauce)

Steps
- Preheat the oven to 425°F (220°C).
- Place the branzino on a parchment-lined baking tray and pat dry inside and out.
- Score the skin with three shallow cuts per side.
- Drizzle with olive oil and rub inside and out; season with salt and pepper.
- Stuff cavity with smashed garlic cloves, lemon slices, and fresh herbs.
- Place additional lemon slices around fish for garnish.
- Roast in the oven for 16 to 18 minutes until flesh is opaque and flakes easily.
- Optional: broil for last 1-2 minutes for crispy skin.
- Make lemon garlic butter: melt 1/2 cup butter, add 2-3 garlic cloves, stir 30 seconds, remove from heat, add 1/4 tsp kosher salt and juice of 1 lemon.
- Garnish fish with roasted lemon slices and fresh herbs; drizzle with lemon garlic butter sauce.
