- as needed Chicken thighs (bone in)
- as needed Sausages (chicken or other type)
- as needed Potatoes
- as needed Onions
- as needed Peppers
- as needed Olive oil (Greek style)
- from a good lemon Lemon juice
- to taste Dried oregano
- to taste Smoked paprika
- to taste Red chili flakes
- to taste Thyme
- pinch of each Salt and pepper
- as needed Garlic (minced/chopped)
- as needed Fennel seeds
- for drizzling Extra virgin olive oil

Steps
- In a bowl, combine the olive oil, lemon juice, dried oregano, smoked paprika, red chili flakes, thyme, salt, and pepper.
- Add the chopped garlic to the marinade mixture.
- Cut the chicken thighs into pieces (bone in is recommended).
- Cut the potatoes in half. If using baby white potatoes, they can be used whole.
- Roughly chop the onions and peppers.
- Arrange the chicken, sausages, potatoes, onions, and peppers on a sheet pan or large cast iron/stainless steel pan.
- Drizzle the prepared marinade over all ingredients and toss to coat everything evenly.
- Scatter the chopped garlic and fennel seeds over the top of the assembled dish.
- Preheat oven to 400°F (200°C).
- Place the sheet pan in the preheated oven and bake for approximately one hour.
