Slow Cooker Beef Barbacoa

Ingredients

  • 3 1/2 pounds Beef cheeks (cachetes)
  • 1/2 Onion
  • A couple of Garlic cloves
  • 3 Chipotle peppers in adobo sauce
  • To taste Kosher salt
  • 2 Bay leaves
  • 1 1/4 cup Lime juice or orange juice (or water)

Steps

  1. Rinse the meat thoroughly.
  2. Pat it dry with paper towels and cut into smaller chunks, keeping all of the fat.
  3. Season the meat on all sides with plenty of salt.
  4. Quickly sear the seasoned meat in a skillet with a little oil until the outside is brown to lock in juices and add flavor.
  5. Place the seared meat into a crock pot set to high.
  6. Coarsely chop the onion, then put it into a blender along with the garlic cloves and chipotle peppers.
  7. Squeeze about 1 1/4 cup of lime juice (or use orange juice or water) and pour it into the blender.
  8. Pureé the mixture until smooth.
  9. Pour the blended puree directly over the meat chunks in the crock pot.
  10. Add the two bay leaves, cover, and cook for five to seven hours.
  11. Remove the bay leaves after cooking.
  12. Transfer the barbacoa to a serving dish. (Optional: Place under the broiler for a few minutes if you prefer crispy edges.)
