Slow Cooker Beef Barbacoa

- 3 1/2 pounds Beef cheeks (cachetes)
- 1/2 Onion
- A couple of Garlic cloves
- 3 Chipotle peppers in adobo sauce
- To taste Kosher salt
- 2 Bay leaves
- 1 1/4 cup Lime juice or orange juice (or water)

Steps
- Rinse the meat thoroughly.
- Pat it dry with paper towels and cut into smaller chunks, keeping all of the fat.
- Season the meat on all sides with plenty of salt.
- Quickly sear the seasoned meat in a skillet with a little oil until the outside is brown to lock in juices and add flavor.
- Place the seared meat into a crock pot set to high.
- Coarsely chop the onion, then put it into a blender along with the garlic cloves and chipotle peppers.
- Squeeze about 1 1/4 cup of lime juice (or use orange juice or water) and pour it into the blender.
- Pureé the mixture until smooth.
- Pour the blended puree directly over the meat chunks in the crock pot.
- Add the two bay leaves, cover, and cook for five to seven hours.
- Remove the bay leaves after cooking.
- Transfer the barbacoa to a serving dish. (Optional: Place under the broiler for a few minutes if you prefer crispy edges.)
