- as desired Vegetables of choice (e.g., green pepper, yellow pepper, Holland peppers, Yukon Gold potatoes, red onions, shishitos)
- as desired Sausage (uncooked chicken apple or other preferred type)
- drizzle Olive oil
- to taste Salt
- to taste Black pepper
- to taste Thyme
- to taste Garlic powder
- to taste Oregano
- to taste Smoked paprika
- to taste Rosemary
- to taste Red pepper flakes

Steps
- Preheat the oven to 450 degrees.
- Spray a baking sheet with oil.
- Prepare the vegetables: Cut red onions into wedges, slice peppers (green, yellow, Holland) into wide strips, cut shishitos in half or leave whole, and quarter Yukon Gold potatoes.
- Place all prepared vegetables on the baking sheet.
- Drizzle the vegetables with olive oil.
- Season the vegetables generously with salt, black pepper, thyme, garlic powder, oregano, smoked paprika, rosemary, and red pepper flakes. Mix well to ensure even coating.
- Scatter the uncooked sausages over the seasoned vegetables on the pan.
- Place the baking sheet in the preheated oven for 25-30 minutes.
- After 15 minutes, carefully flip the sausages over to ensure they cook evenly.
- Continue cooking for another 10-15 minutes until the sausages are fully cooked and the vegetables are tender.
- Remove from the oven. Garnish with fresh parsley before serving.
