Slow Cooker Carnitas

Ingredients

  • 4 lbs Pork shoulder roast (Boston butt)
  • 1 large Navel orange
  • 4 Garlic cloves
  • 2-3 Bay leaves
  • 1 cup to 1.5 cups Coca-Cola
  • 1.5 - 2 teaspoons Salt (fine salt)

Steps

  1. Cut the pork shoulder roast into large chunks.
  2. Place all ingredients (pork, orange, garlic, bay leaves, Coca-Cola, and salt) into a slow cooker.
  3. Cover the slow cooker with a lid.
  4. Set the slow cooker to high heat.
  5. Cook for 5 to 5.5 hours, or until the pork is tender but still holds its shape.
  6. Remove the cooked carnitas from the slow cooker.
  7. Heat oil in a pan over medium heat.
  8. Fry the carnitas chunks until golden brown and crispy on the exterior (about 5-7 minutes).
  9. Serve with warm corn tortillas, fresh onion, cilantro, and creamy green salsa.
