Smoked Tofu Vegetable Stir Fry

- 80 grams Broccolini
- 40 grams Carrot
- 80 grams Crimini mushrooms
- 1/2 Red bell pepper
- 1/2 Red onion
- 4 spears Baby corn
- 90 grams Smoked tofu
- 1 tablespoon Soy sauce (all-purpose)
- 1 teaspoon Dark soy sauce
- 1 tablespoon Hoisin sauce
- 1 tablespoon Sriracha
- 1 teaspoon Cane sugar
- Splash Toasted sesame oil
- 1 teaspoon Avocado oil

Steps
- Chop 80 grams of broccolini into bite-sized pieces.
- Chop about 40 grams of carrot into matchsticks.
- Brush off about 80 grams of crimini mushrooms with a paper towel and chop them into quarters.
- Slice half a red bell pepper.
- Quarter half a red onion.
- Chop in half four spears of baby corn.
- Cut about 90 grams of smoked tofu into bite-sized cubes.
- Prepare the stir-fry sauce by combining: 1 tablespoon soy sauce, 1 teaspoon dark soy sauce, 1 tablespoon hoisin sauce, 1 tablespoon sriracha, 1 teaspoon cane sugar, and a splash of toasted sesame oil. Stir the combined ingredients and set aside.
- Heat a non-stick pan over medium-high heat with 1 teaspoon avocado oil.
- Add the smoked tofu to the hot pan and sauté for three to four minutes until it has some crispiness.
- Set the cooked tofu aside.
- Add another teaspoon of oil, red onions, and broccolini to the pan. Sauté for a couple of minutes, allowing the veggies to sear and get some color.
- Add cremini mushrooms and carrots; sauté for a couple of minutes.
- Add red bell pepper and baby corn; sauté for another couple of minutes.
- Return the tofu to the pan with the vegetables. Pour in the prepared stir-fry sauce.
- Sauté for about another minute, being careful not to overcook so that the veggies do not become soggy.
- Plate the stir fry and serve with freshly steamed rice.
