- 1 tbsp Olive Oil
- 1 Red Bell Pepper
- 2 cloves Garlic
- as needed Couscous
- to taste Salt
- to taste Black Pepper
- as needed Boiling Water
- 500g Cooked chickpea
- 1 tsp Italian Herbs
- 1 tsp Ground Coriander
- 1/2 tsp Ground Chilli
- 2 tbsp Nutritional Yeast
- as needed Chickpea Flour
- 1 tsp Baking Powder
- to taste Salt
- 2 tbsp Parsley
- 2 Flax Eggs

Steps
- Sauté the red bell pepper and garlic in olive oil until softened.
- Add cooked chickpeas, couscous, salt, and black pepper to a bowl. Mix well.
- In a separate small pot, bring boiling water to a boil. Add the mixture of spices (Italian herbs, ground coriander, ground chilli, nutritional yeast, chickpea flour, baking powder, salt, parsley) and flax eggs. Stir until combined into a batter.
- Form the chickpea patties using the cooked chickpeas and the spice/flax egg mixture.
- Bake at 190°C for 15-20 minutes, or until golden brown on both sides.
