Turkish Potato and Meat Stew

Steps

  1. Cook the meat in a pressure cooker or regular pan. After sautéing, add hot water and continue to cook until it is soft.
  2. Soak 2 cups of long grain rice in hot salty water for about 20 minutes.
  3. While the meat cooks, prepare the pilaf: heat butter and olive oil in a pan. Add the soaked and drained rice and sauté for three or four more minutes to give it flavor.
  4. In another pan, sauté onions until softened, then add chopped green peppers from the freezer, tomato paste, and red pepper paste. Sauté these ingredients for at least three or four minutes to enhance the taste.
  5. Add the cooked meat along with some stock to the sautéed vegetables and simmer.
  6. Peel and cut potatoes into about 3-4 centimeter cubes.
  7. In a separate pot, fill the dried red chili peppers with hot water until they cover them. Cook for about 10-15 minutes until the potatoes are soft (or use a pressure cooker/regular pan as needed).
  8. Prepare the lentil soup: Heat some oil in a regular or pressure cooker pan. Add onions, carrots, chopped garlic, and potato pieces.
  9. Process all ingredients together. Add spices like dried mint, paprika, and turmeric to taste. If using chicken broth, add it for more flavor.
  10. Cook until the lentils are soft; process everything to make the soup ready.
