Vegan Tofu Teriyaki Sheet Pan Dinner

  • 1 Zucchini
  • 200 to 250 grams White mushrooms
  • as needed Red onion (or any onion)
  • 2 Bell peppers
  • 1 brick Extra firm tofu
  • 1 to 2 tablespoons Corn starch
  • 1 cup Teriyaki sauce (or substitute)

Steps

  1. Preheat your oven to 425 degrees.
  2. Cut the zucchini into half moons and place it on a sheet pan.
  3. Cut the white mushrooms in half and add them to the sheet pan, ensuring all vegetables are cut into even sizes.
  4. Slice the red onion (or any onion) into larger pieces of similar size to the other vegetables and add to the sheet pan.
  5. Cut the extra firm tofu into equal-sized cubes. If desired for texture, freeze and thaw the tofu ahead of time.
  6. In a bowl, toss the tofu with 1 to 2 tablespoons of corn starch until evenly coated.
  7. Pour the teriyaki sauce over the sheet pan with the vegetables and tofu.
  8. Place the sheet pan in the oven and bake for about 30 minutes.
  9. At halfway through baking (after approximately 15 minutes), flip all the ingredients on the sheet pan.
  10. Remove from the oven, serve as desired (e.g., over brown rice or quinoa), and garnish with cilantro, green onions, or sesame seeds.
