Vegetable Pancake

- 4 Green onion
- amount needed Leek
- amount needed Zucchini
- sliced thinly, optional Jalapeno (or green chili pepper)
- 1/2 cup Sweet potato or carrot
- 2 cups Onion
- 3/4 cup Mushroom (Shiitake or Portobello)
- 3/4 cup All-purpose flour
- 1/2 teaspoon Salt
- 3/4 cup Water
- approx. 3 tablespoons Vegetable oil (for cooking)

Steps
- Cut the green onions into one-inch pieces.
- Slice the leek.
- Cut the zucchini into matchsticks.
- Thinly slice the jalapeno if using.
- Slice the onion (2 cups total).
- Grate or chop the sweet potato/carrot (1/2 cup).
- Slice the mushrooms thinly (3/4 cup).
- In a bowl, mix 3/4 cup all-purpose flour with 1/2 teaspoon salt and 3/4 cup water until combined.
- Heat a non-stick skillet over medium-high heat and add about two tablespoons of vegetable oil.
- Pour the mixed vegetables into the hot skillet and spread them evenly to form a thin pancake.
- Turn down the heat to medium.
- Add the sliced mushrooms to the top of the pancake.
- Once the bottom is set (after about one minute), flip the pancake.
- Increase the heat slightly, add another tablespoon of vegetable oil around the edges and tilt the pan so it coats the center for extra crunch.
- Cook for approximately three minutes until golden brown on both sides.
