Air Fryer Donuts

Ingredients

  • 1 cup Whole milk
  • 1 teaspoon Sugar
  • 2 1/4 teaspoons (one packet) Active dry yeast
  • 1/4 cup or 50 g Granulated sugar
  • 6 tablespoons or 85 G Melted butter
  • 1 (room temperature) Large egg
  • 3 cups or 360 G All-purpose flour

Steps

  1. Measure out one cup of whole milk and warm it to 105 to 110°F.
  2. Mix in 1 teaspoon of sugar and one packet (2 1/4 teaspoons) of active dry yeast into the warmed milk. Set aside for about 5 minutes until foamy.
  3. In a stand mixer, combine the remaining wet ingredients: 1/4 cup (50 g) granulated sugar, 6 tablespoons (85 G) melted butter, and one large room temperature egg.
  4. Whisk these ingredients together to combine.
  5. Add three cups (360 G) of all-purpose flour and 1/2 teaspoon of salt to the wet mixture.
  6. Using a dough hook on low speed, mix until a shaggy dough forms. Increase the speed and continue mixing until an elastic dough develops.
  7. Continue mixing for about 5 minutes at medium-low speed until the dough is smoother and more elastic.
  8. If necessary, mix for two to three additional minutes until the dough becomes much more elastic and tacky but no longer sticks to dry fingers.
  9. Lightly oil a bowl (about one tablespoon or less). Transfer the slack dough into the oiled bowl. Turn it over once to coat evenly, cover, and let rise in a warm place for about 90 minutes (or until doubled in size).
  10. Gently punch down the risen dough.
  11. Set up your rolling surface with flour. Pat the dough into a rectangular shape approximately one inch thick.
  12. Roll the dough out to half an inch thickness.
  13. Dip both of your 1-inch and 3-inch cutters in flour before cutting.
  14. Cut circles from the rolled dough, lifting each circle up gracefully onto a lined baking sheet. Cut a hole in the center of each piece.
  15. Allow the cut donuts to rest for about 20 minutes loosely covered so they can puff up slightly.
  16. While the donuts are resting, prepare the glaze: whisk together powdered sugar, 2 tablespoons melted butter, 1/2 cup whole milk (adding more if needed), and 1/2 teaspoon vanilla extract until smooth.
  17. Preheat your air fryer. Spray the basket lightly with oil (coconut oil or other high heat oil).
  18. Place the donuts in the air fryer basket, spraying them all together.
  19. Air fry the donuts for 8 minutes, and cook the doughnut holes separately for 6 minutes.
  20. Once cooked through, dip the warm donuts into the prepared glaze.
