Amish Ribs and Rice in a Jar

Ingredients

  • Pork ribs
  • 1 large Onion
  • 2 Carrots
  • 3 tbsp Salt
  • Long grain rice
  • 1 tsp per jar Vinegar
  • as needed Water
  • Oil

Steps

  1. Finely chop the onion and cut the carrots.
  2. Fry the ribs with the onion in scorching-hot oil to form a crust.
  3. Add 3 tablespoons of salt to the meat.
  4. Add the carrots and fry for another 10 minutes.
  5. Pour in hot water and simmer for 15 minutes to make broth.
  6. Wash the long grain rice until the water runs clear.
  7. Layer washed rice on the bottom of the jar, about two fingers thick.
  8. Add the fried ribs and vegetables on top and pack tight to remove air pockets.
  9. Add 1 teaspoon of vinegar to each jar.
  10. Pour in the hot broth, leaving 2 to 3 cm (1 in) of head space.
  11. Place the jars in a pot and boil for 3 to 4 hours.
  12. Remove the jars and screw the lids tight using a towel.
  13. Let the jars cool until the lids are sucked inward (vacuum seal).
