Juneteenth Barbecue Rib Tips with Strawberry Hot Honey Glaze

Ingredients

  • pork rib tips (trimmed from spare ribs)
  • yellow mustard (binder)
  • Sweet Heat rub
  • smoked paprika
  • black pepper
  • apple juice
  • water
  • 1 cup barbecue sauce
  • 1/2 cup strawberry jam/preserves
  • 1 tablespoon hot sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Sweet Heat rub (for glaze)
  • 1/2 teaspoon smoked paprika (for glaze)
  • 1 tablespoon brown sugar
  • 3 tablespoons local honey
  • 1 teaspoon apple cider vinegar
  • butter

Steps

  1. Trim pork rib tips from spare ribs into bite-size pieces, keeping some fat for juiciness.
  2. Apply yellow mustard as a binder on all sides.
  3. Season both sides with Sweet Heat rub, smoked paprika, and black pepper.
  4. Let rest 15-20 minutes for meat sweat.
  5. Preheat pellet grill to 250°F.
  6. Place rib tips on grill not touching each other.
  7. Smoke for about 1 to 1.5 hours, spritzing every 30 minutes with equal parts apple juice and water.
  8. While smoking, make the Strawberry Hot Honey BBQ Glaze: combine barbecue sauce, strawberry jam, hot sauce, Worcestershire sauce, Sweet Heat rub, smoked paprika, and brown sugar in a saucepan.
  9. Heat on medium flame and whisk together.
  10. Add honey and apple cider vinegar, simmer 7-8 minutes on low.
  11. Turn off heat and stir in butter for shine.
  12. Transfer smoked rib tips to aluminum foil pans.
  13. Brush generously with strawberry BBQ glaze and pour some in the bottom.
  14. Cover tightly with aluminum foil.
  15. Return to grill and steam/braise for 1 to 1.5 hours until very tender.
  16. Uncover, brush with remaining glaze.
  17. Serve with barbecue baked beans and Southern potato salad.
