- 1/2 cup Boiling water
- 3 heaping tablespoons Thai palm sugar (grated)
- 2 tablespoons Fish sauce
- 1 tablespoon Thai black soy sauce
- 1/2 pound Chicken breast
- generous pinch Kosher salt
- 1 teaspoon Ground white pepper
- 2 teaspoons Cornstarch
- 2 teaspoons Thai sweet soy sauce
- 8 ounces Dried pad thai rice noodles
- 1/3 cup Dried shrimp
- 3 tablespoons (for chicken), 3 tablespoons (for stir-fry) High heat cooking oil
- 2 Shallots (thinly sliced)
- 4 cloves Garlic (thinly sliced)
- 1 1/2 tablespoons (optional) Zakkai (Thai salted daikon) (finely minced)
- 2 to 3 Eggs
- 1 cup Chinese garlic chives
- 1 cup Mung bean sprouts
- generous amount (for serving) Crushed toasted peanuts
