- 1 medium potato (chopped) Sweet potatoes
- Half a bag Soy curls
- As needed, for rehydrating soy curls Water
- About one-third of a small head (sliced) Red cabbage
- A few heads (cut and washed) Sweet baby broccoli
- To taste Barbecue sauce
- To taste Garlic powder
- To taste Onion powder
- To taste Salt
- As needed Cooking spray

Steps
- Preheat the oven to 400°F.
- Spray a sheet pan with cooking spray and add the chopped sweet potatoes, seasoning them with salt. Place in the oven for about 15 minutes.
- While the potatoes cook, rehydrate half of the bag of soy curls in water for about 10 minutes.
- Using a mandolin (or knife), slice about one-third of the red cabbage.
- Wash and cut the sweet baby broccoli into pieces, pulling off any florets you wish to remove.
- Drain the rehydrated soy curls and squeeze out all excess water thoroughly using your hands.
- Place the drained soy curls back in a bowl and add barbecue sauce. Stir well to coat.
- After 15 minutes (when potatoes are halfway cooked), take them out of the oven.
- Arrange the sweet potatoes on one side of the sheet pan, followed by the red cabbage next to it.
- Add the seasoned soy curls in between the vegetables, ensuring everything is separated for crispiness.
- Place the broccoli on top of the arrangement.
- Season all ingredients with garlic powder and onion powder. Add extra salt to the broccoli, potatoes, and cabbage.
- Lightly spray the entire pan with cooking spray to prevent drying out.
- Return the sheet pan to the oven for 15–20 minutes.
