- 4-5 Potatoes
- as needed Olive oil
- to taste Salt
- to taste Black pepper
- 1/2 tsp Sweet paprika
- 450 grams Minced meat (ground beef)
- 1 Onion
- 1/2 tsp Oregano
- 250 g Tomato passata
- as needed Mozzarella
- 1 large Fennel bulb
- 1 Green apple
- 3 Celery sticks
- as needed Fennel leaves or parsley
- 1/2 Lemon juice
- 1/4 cup Extra virgin olive oil
- 1/2 cup Toasted walnuts

Steps
- Season the potatoes with salt, black pepper, and 1/2 tsp sweet paprika.
- Bake the seasoned potatoes at 190°C for 20 minutes.
- In a pan, season the minced meat with salt, black pepper, oregano, and 1/2 tsp sweet paprika.
- Fry the minced meat on medium heat for 3-4 minutes.
- Add the onion to the pan and fry for another 3-4 minutes.
- Pour in the tomato passata and continue frying for another 3-4 minutes.
- Once the potatoes are ready, pour the cooked ground beef mixture over them.
- Top with mozzarella and bake for 10 minutes or until nicely browned.
- Thinly slice the large fennel bulb on a mandolin (or as thinly as possible with a sharp knife).
- Chop the green apple into pieces.
- Add the celery sticks, fennel leaves (or roughly chopped parsley), and mix.
- To make the sauce, juice 1/2 lemon. Add salt, black pepper, extra virgin olive oil, and toasted walnuts to create a dressing.
