Ingredients
- 1 1/2 lbs Ground beef
- 1 cup finely chopped Onions
- 2 large, finely minced Garlic cloves
- 1/3 cup chopped Jalapeños (homemade or pickled)
- 1 cup chopped Tomatoes
- 3 tablespoons Taco seasoning (or all-around seasoning)
- 2 cups Refried beans
- Medium size, as needed Flour tortillas
- As needed for thin layers Mexican rice
- As desired Sour cream
- As desired American cheese (or preferred type)

Steps
- Brown the ground beef and drain any excess grease.
- Add 1 cup of finely chopped onions to the browned meat. Cook for at least one minute until translucent, stirring frequently.
- Stir in 2 large minced garlic cloves, 1/3 cup chopped jalapeños (or pickled jalapeños), 1 cup chopped tomatoes, and 3 tablespoons of taco seasoning (or all-around seasoning).
- Toss everything together to combine the flavors.
- Add 2 cups of refried beans. Stir well until all ingredients are thoroughly incorporated.
- Cover the mixture with a lid and let it simmer for about 5 minutes to allow the flavors to meld.
- Preheat oven to 350°F.
- Lightly spray a 10 1/2 by 9 2/4 inch dish with non-stick spray.
- Place tortillas in the bottom of the prepared dish, overlapping them as needed.
- Spread half of the meat filling over the tortilla layer.
- Add a thin layer of Mexican rice over the meat filling.
- Dollop sour cream on top and spread it evenly.
- Sprinkle with cheese.
- Repeat the process: place another tortilla on top, add the remaining half of the meat mixture, then a thin layer of rice, followed by the rest of the sour cream, and finally more cheese.
- Cover the dish tightly with aluminum foil.
- Bake in the preheated oven for 25 to 30 minutes, or until the casserole is bubbly. For the last 5 minutes, remove the foil to allow the top to get golden brown.
- Let the burrito casserole cool for about 15-20 minutes before serving.
