Chili Mac

Ingredients

  • 2 cans fire roasted diced tomatoes
  • 2 cups cheese
  • onions
  • extra virgin olive oil (garlic infused)
  • garlic
  • ground beef (80/20)
  • chili powder
  • cayenne pepper
  • smoked paprika
  • A seasoning
  • pasta
  • about 1 cup beef stock
  • beans
  • parsley

Steps

  1. Heat garlic-infused olive oil in a skillet over medium heat.
  2. Brown the ground beef, breaking it up as it cooks.
  3. Add diced onion and minced garlic; cook until softened.
  4. Season with chili powder, cayenne pepper, smoked paprika, and A seasoning; mix well.
  5. Transfer beef mixture to the Crock-Pot.
  6. Add fire roasted diced tomatoes (undrained), drained beans, uncooked pasta, and about 1 cup beef stock.
  7. Stir to combine, put the lid on, and cook on high for 3 hours (or low for 6 hours).
  8. In the last few minutes, stir in grated cheese until melted and creamy.
  9. Top with additional shredded cheese and parsley; serve in bowls.
