- as needed (cut into thin slices) Chicken breasts
- as needed Rigatoni pasta
- as needed Olive oil
- as needed (divided) Cajun seasoning
- as needed Black pepper
- as needed Butter
- as needed (chopped) Onions
- as needed (freshly chopped) Garlic
- as needed (sliced/diced) Red bell pepper
- as needed Tomato sauce
- as needed Heavy whipping cream
- some Pasta water

Steps
- Cook the rigatoni pasta according to package instructions.
- Heat a pan over medium heat and add olive oil.
- Add the sliced chicken pieces, season with half of the Cajun seasoning and black pepper, and cook for about four to six minutes until done.
- Remove the cooked chicken from the pan and set aside in a bowl.
- Melt butter in the same pan over medium heat.
- Add onions, garlic, and red bell peppers. Sauté for a couple of minutes.
- Pour in the tomato sauce, heavy whipping cream, some pasta water, and the remaining Cajun seasoning into the pan.
- Mix and simmer for about three minutes until the sauce begins to thicken.
- Return the cooked chicken from the bowl back into the pan with the sauce.
- Add the cooked rigatoni pasta to the pan. Fold everything together and cook for two to three minutes, or until the pasta is tender and the sauce has thickened slightly more.
- Stir in the shredded Parmesan cheese until well combined.
- Turn off the heat and let the dish sit for a couple of minutes to allow it to thicken before serving.
