Crispy Beef Tacos

Ingredients
- 1 1/2 pounds Beef (80/20)
- as needed Onions
- as needed Pickled jalapenos and carrots
- as needed Oil
- to taste Fajita seasoning
- a little bit Water
- as many as desired Corn tortillas
- as needed Shredded mozzarella cheese
- as needed Queso fresco (Mexican cheese)
- as needed Cilantro
- for serving Romaine lettuce
- as needed Guacamole
- as needed Sour cream

Steps
- Add a little bit of oil to the griddle set on medium low and pop it up slightly.
- Cook the chopped beef, onions, pickled jalapenos, and carrots until the meat is cooked nice and crispy.
- Once the beef is cooked, add fajita seasoning and mix well.
- Add the mixture of onions and pickled jalapeno to the beef. Toss everything together.
- Add a little bit of water to help render all the seasonings into the meat.
- On the same side of the griddle, add a little oil and slap down corn tortillas to get them nice and crispy.
- Shred mozzarella cheese over the entire tortilla.
- Place the beef mixture onto only half of each tortilla.
- Add queso fresco on top of the meat.
- Sprinkle cilantro over the filling.
- Fold the tortillas over, press down to make them firm, and flip them occasionally while cooking until they are nice and crispy.
- Move the finished tacos to a paper towel to drain excess oil.
- Plate the tacos on top of fresh romaine lettuce. Top with guacamole and sour cream.
