Crock-Pot Sweet Chili Chicken

- boneless, skinless chicken thighs
- green bell pepper
- red bell pepper
- garlic cloves
- 1 tablespoon (grated) fresh ginger
- sweet chili sauce
- soy sauce
- rice vinegar
- honey
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- sesame seeds
- rice

Steps
- Trim chicken thighs and place in the bottom of the crock-pot.
- Slice green and red bell peppers into strips and add on top of chicken.
- Mix sweet chili sauce, soy sauce, rice vinegar, honey, pressed garlic, and grated ginger in a bowl.
- Pour sauce mixture over chicken and peppers.
- Cook on high for 3-4 hours or low for 6-7 hours. Keep lid on.
- About 30 minutes before done, mix cornstarch with equal parts cold water to make a slurry.
- Add slurry to crock-pot, stir, and cook an additional 15-30 minutes until sauce thickens.
- Serve over rice, garnish with sesame seeds.
