Crockpot Beef Short Ribs

Ingredients
- 1 Beef short ribs (approx. 4 lbs)
- 1 tbsp Bacon fat or extra virgin olive oil
- to taste Salt and pepper
- to taste Kosher salt
- 2 tbsp Soy sauce (regular)
- 1/3 cup All-purpose flour
- 2 tbsp Butter
- 1 Large onion
- 2 cups Beef broth
- 4 Garlic cloves (peeled and smashed)

Steps
- Season the beef short ribs with salt and pepper.
- Heat a cast iron skillet over high heat.
- Add bacon fat or olive oil to the hot skillet.
- Place the seasoned short ribs in the pan, ensuring they are not touching each other. Brown them for about 4 minutes on each side until nicely colored.
- Flip the short ribs and continue browning all sides until done.
- Remove the browned short ribs from the skillet and place them into a crockpot.
- In the same skillet, sauté the diced onion in the rendered fat or oil until golden brown. Add the smashed garlic and cook for about 1 minute until fragrant.
- Add the butter to the pan and let it melt.
- Stir in the flour while constantly moving the mixture to prevent clumping.
- Gradually whisk in the beef broth, stirring continuously to create a roux/gravy base.
- Whisk in the red wine vinegar, soy sauce, and honey until all ingredients are incorporated. Taste and adjust seasonings as needed.
- Transfer the gravy mixture over the short ribs in the crockpot.
- Cook on low for 8 hours or on high for 4 hours.
