Crockpot Beef Short Ribs

Ingredients

  • 1 Beef short ribs (approx. 4 lbs)
  • 1 tbsp Bacon fat or extra virgin olive oil
  • to taste Salt and pepper
  • to taste Kosher salt
  • 2 tbsp Soy sauce (regular)
  • 1/3 cup All-purpose flour
  • 2 tbsp Butter
  • 1 Large onion
  • 2 cups Beef broth
  • 4 Garlic cloves (peeled and smashed)

Steps

  1. Season the beef short ribs with salt and pepper.
  2. Heat a cast iron skillet over high heat.
  3. Add bacon fat or olive oil to the hot skillet.
  4. Place the seasoned short ribs in the pan, ensuring they are not touching each other. Brown them for about 4 minutes on each side until nicely colored.
  5. Flip the short ribs and continue browning all sides until done.
  6. Remove the browned short ribs from the skillet and place them into a crockpot.
  7. In the same skillet, sauté the diced onion in the rendered fat or oil until golden brown. Add the smashed garlic and cook for about 1 minute until fragrant.
  8. Add the butter to the pan and let it melt.
  9. Stir in the flour while constantly moving the mixture to prevent clumping.
  10. Gradually whisk in the beef broth, stirring continuously to create a roux/gravy base.
  11. Whisk in the red wine vinegar, soy sauce, and honey until all ingredients are incorporated. Taste and adjust seasonings as needed.
  12. Transfer the gravy mixture over the short ribs in the crockpot.
  13. Cook on low for 8 hours or on high for 4 hours.
