Grandma's Meatloaf

Ingredients

  • ground beef (85/15)
  • diced onion
  • diced bell pepper
  • eggs
  • milk
  • 1 cup flavored crackers (e.g., Ritz/Rich) or panko
  • Worcestershire sauce
  • to taste salt
  • to taste black pepper
  • brown sugar (for sauce)
  • ketchup or sweet sauce base (for topping)

Steps

  1. Preheat oven to 350 degrees F.
  2. Dice onion and bell pepper small (fine dice for more flavor).
  3. In a large bowl combine ground beef, diced onion, diced bell pepper, eggs, milk, crushed crackers, Worcestershire sauce, salt, and pepper.
  4. Mix gently until just combined — do not overwork the meat.
  5. Shape mixture into a loaf and place in a baking dish.
  6. Optional: refrigerate loaf for 30 minutes to help it set before baking.
  7. Bake at 350 degrees F for 45 minutes.
  8. While meatloaf bakes, mix brown sugar into the sweet topping sauce.
  9. After 45 minutes, remove from oven and brush the top generously with the sweet sauce.
  10. Raise oven temperature to 400 degrees F.
  11. Return meatloaf to oven and bake an additional 15 minutes, checking every 5 minutes, until the top is set and caramelized.
  12. Verify internal temperature reaches 165 degrees F.
  13. Let cool slightly, slice with a serrated knife, and serve.
