Dirty Spaghetti

  • 1/2 pound Ground beef
  • To taste Andouille sausage
  • Chopped Celery
  • Chopped Onion
  • Chopped Bell pepper
  • 1/2 pound Spaghetti
  • To cover pasta Beef broth
  • To taste Onion powder
  • To taste Garlic powder
  • To taste Paprika
  • To taste Cumin
  • To taste Oregano
  • To taste Dried thyme
  • To taste Salt
  • To taste Pepper
  • To taste Cayenne
  • A little Worcestershire sauce

Steps

  1. Brown the ground beef until crumbled, allowing the fat to render out.
  2. Add the chopped celery, onion, and bell pepper to the pan with the browned beef and sausage. Cook until the vegetables are tender and the flavors begin to build.
  3. Stir in the spices: onion powder, garlic powder, paprika, cumin, oregano, dried thyme, salt, pepper, and cayenne (or a Cajun seasoning mix). Let the spices bloom in the heat and fat for a moment.
  4. Deglaze the pan by adding beef broth and scraping up any brown bits from the bottom of the pan.
  5. Add the spaghetti to the liquid. Spread it out as much as possible, ensuring all pieces are submerged in the liquid.
  6. Add extra liquid if necessary to ensure the pasta is just covered.
  7. Bring the mixture to a boil and cover the pot.
  8. Cook for about 2 minutes, then stir. Continue cooking by covering the pot and letting it simmer until the pasta softens. Uncover occasionally to give it a little stir every couple of minutes as needed.
  9. Once the liquid has been absorbed and the pasta is tender, finish with Worcestershire sauce and taste, adding more salt if necessary.
  10. Garnish with green onions before serving.
