Feijão Carioca

- 3 cups Pinto Beans (feijao carioca)
- 8 cups Water
- small pieces Smoked sausage
- a little bit Olive oil
- not specified Onions
- 1 tablespoon Salt

Steps
- Soak the beans in enough water overnight or for at least 8 to 12 hours.
- Discard the soaking water and rinse the beans very well.
- Place the beans in a large pot with 8 cups of fresh water. Cook it in a pressure pan for 30 minutes on high heat (or use a normal pan, cooking for more time).
- Cut smoked sausage into small pieces and fry them very well with a little bit of olive oil.
- Add the onions to the pot with the fried sausage and let them fry for some more minutes.
- Once the beans are cooked and the pressure is released (if using a pressure pan), turn on the high heat and let it simmer for some more minutes to get thicker and flavored.
- Mix the fried sausage and onion into the beans, add one tablespoon of salt, and optionally add a bay leaf.
