Feijão Carioca

Ingredients

  • 3 cups Pinto Beans (feijao carioca)
  • 8 cups Water
  • small pieces Smoked sausage
  • a little bit Olive oil
  • not specified Onions
  • 1 tablespoon Salt
  • one Bay leaf (optional)

Steps

  1. Soak the beans in enough water overnight or for at least 8 to 12 hours.
  2. Discard the soaking water and rinse the beans very well.
  3. Place the beans in a large pot with 8 cups of fresh water. Cook it in a pressure pan for 30 minutes on high heat (or use a normal pan, cooking for more time).
  4. Cut smoked sausage into small pieces and fry them very well with a little bit of olive oil.
  5. Add the onions to the pot with the fried sausage and let them fry for some more minutes.
  6. Once the beans are cooked and the pressure is released (if using a pressure pan), turn on the high heat and let it simmer for some more minutes to get thicker and flavored.
  7. Mix the fried sausage and onion into the beans, add one tablespoon of salt, and optionally add a bay leaf.
